Sausages are made out of various meats, often pork and beef, but also venison, chicken, and even oyster and kipper. They are often seasoned with a wide variety of herbs and spices. They are sold either ready cooked or uncooked and must be kept refrigerated and cooked thoroughly before eating.
Grill sausages under a medium heat to prevent the skin from bursting. Pricking the sausages also helps prevent this. Fresh sausages should be grilled for 10-20 minutes, depending on shape. Fully cooked sausages only need browning and warming on the grill. Use tongs or a spatula to turn sausages on the grill. Serve sausages with a variety of condiments, such as mustard, pickled peppers, grilled onions and tomatoes. Saveloy sausages
Ingredients: 3lb tender pork
Method: Rub the meat with the saltpetre and salt. Leave for 3 or 4 days rubbing and turning every day. Mince finely and mix in with breadcrumbs, pepper and chopped sage leaves. Fill casings with mixture. They should be boiled and smoked before eating. Serve with chips! Any leftover sausages can be sliced into potato or pasta salad, tossed with lettuce and a mustard vinaigrette or added to a casserole. |
